This lot of natural was processed from cherries received at RTC’s Cyiwa CWS on 16th June. Upon receiving cherries, proper sorting was done, followed by floating to ensure that all the poor-quality cherries were separated from the good quality. The quality cherry was sent direct to the drying beds. Drying coffee at Cyiya involves covering beds with nylex at night and during the rain to prevent excessive humidity. It took 26 days of this lot to be fully dry, and the coffee had MC of 10.8% when the coffee was removed from drying beds to the store.
