The lot was cultivated near the source of the Nile River, in
volcanic soil mixed with clay. The stable climate and abundant
sunlight support consistent flowering and cherry ripening,
resulting in high Brix levels. These high-Brix cherries provide an
excellent foundation for producing high-quality anaerobic honey
coffee.
After pulping, the coffee underwent an 8-day (192-hour) anaerobic
fermentation, followed by 25 days of sun-drying to reach an ideal
moisture content of 11.0%.In the cup, it is complex and juicy, with
notes of peach, apricot, and red fruits, layered with warm spices,
honey, black tea, and cacao. It has a bright, wine-like acidity and
a long, sweet finish.

About the Farm
ARABICA Cooperative’s farmers have improved their livelihoods through coffee farming. Coffee is an important source of income, helping families pay school fees, purchase livestock that provides manure, and meet everyday household needs more easily.Through training on good agricultural practices, farmers have strengthened their knowledge and skills in caring for their coffee trees. This has led to higher productivity and increased incomes. They have also learned that harvesting only fully ripe cherries brings better returns, while supporting the washing station’s commitment to producing high-quality coffee. The positive impact of coffee farming has been significant. Older farmers are now encouraging the younger generation to engage in coffee production, so that coffee can remain a foundation for the well-being and development of their families, communities, and Rwanda as a whole.
